1 box gf graham crackers (about 1.5 c crumbled)
1/4 c @sunbutter organic sunflower butter
1 tsp cinnamon .
Stovetop Apple filling
3 Granny Smith apples
1/4 c coconut sugar
1 tbsp cinnamon
2 c water
1 freshly squeezed lemon
1-2 tbsp tapioca flour (or cornstarch)
Preheat oven to 400. Process crackers to a crumble. Stir sunbutter, cinnamon and graham cracker crumbs with a fork until mix resembles coarse sand. Press mixture into the bottom and sides of a mini cupcake pan. Bake at 400 for 10 min. Allow crusts to cool.
While crust bakes, prep apple filling , dice apples into small bites and toss them in lemon juice. Bring water to a slow boil, add coconut sugar, cinnamon and tapioca flour, stir well until dissolved. Stir in apples and simmer for 30-35 min or until apples are soft (adding more tapioca flour for increased thickness if necessary). Divide filling between crusts, sprinkle granola or nuts over top then drizzle @Sunbutter over the top or drizzle my go to maple sunbutter glaze (melt 2 tbsp coconut oil in microwave, stir in 2 tbsp @sunbutter organic sunflower butter and 2-4 tbsp maple syrup depending on desired sweetness).
